Chickpea Noodle Soup

by IsaChandra

I’ve been sick. And I also broke my toe. But this soup changes everything, at least for the moment. It’s in Veganomicon so you’ll have to get the recipe that way you cheapskates.

I got all the ingredients BUT the mushrooms! I just can’t make it without the forking mushrooms. Looks AMAZING!

I made this and loved it! I substituted in rice noodles because I’m trying to go off wheat, and it was delicious! The chickpeas were a great and much needed protein boost to my shabby diet, too.

Yay for Veganomicon almost being out. Woot!

This soup rocks my frickin’ world! It tastes like olden-days comforty chicken noodle soup tastes. I’ve made a pot of it every week for a month now, and I’m still not getting tired of it. So Good!

Love this soup. I cook the noodles separately since the sobas don’t hold up in liquid for left overs. Then I just put the cold noodles in a bowl, gently reheat the soup on the stovetop, and then pour over noodles. Comes out perfectly.

Issa I have four of your books, but sometimes it’s easier to look up the recipe on the website like when I’m visiting my family and don’t want to pack my cookbooks to show off my vegan cooking skills. I haven’t ordered the cookie, cupcake and pie cookbooks because I’m afraid I’d end up like one of those poor people who are too big to leave their home.

Great recipe, love the flavor of the simple herbs, miso and veggie broth. Takes well to additions/changes. I use rice pasta and liked it. I’m glad to have a soup to enjoy without canned tomatoes in it.

I love that I keep slowly finding new recipes in the Veganomicon. I set it down for a while, but always re-find it. This recipe is my newest fave. I was going to try to make a soup a week from the book, but I got stuck here and have made this and the Black Bean soup over and over again. I predict it’ll be next year when I stumble upon the next soup favorite from this book. Thanks again for sharing your passion and talent!

I saw this photo here on the PPK site when I was browsing in the soup section. This delicious-looking photo convinced me to find chickpea noodle soup in Veganomicon and make it myself. Mmmm! It is marvelous! The first new soup of the new year! I’ve never cooked with Miso before and had never heard of Mirin! An exciting and delicious beginning to a wonderful 2012 of cooking and baking! Thank you Isa!
