I’m home! And also, COOKIES!
by IsaChandra
So I’m back in Portland, just in time for the tail end of the rainy season. What better time to bake cookies? Terry stayed with me for over a week and we got some much needed foodie time. We took lots of pictures for the cookie book and even got to make a few new recipes together. Reunited and it felt so good.
Now I am just kind of settling in and letting life get back to normal. I have a bit of a cold so it’s been mostly soup, cats and tea for me, but I hope to get back to blogging regularly again in the coming weeks. For now, I’ll share some cookie pics and you guys can let me know what you would most like the recipe for. And don’t say all of them! You can also check out our Flickr set and pick any recipe you see there.
Magical Coconut Bars – These are absolutely insane; graham cracker crust, gooey condensed coconut milk layer, chocolate layer, shredded coconut layer. Addictive.

Peanut Butter Blondies – Really simple, REALLY peanut buttery. Dense and delish.

Iced Grapefruit Icebox Cookie – Long neglected grapefruit gets its dessert comeuppance in this delicate, buttery, cookie.

Pignoli Cookies – Who amongst us hasn’t pressed out faces up against the glass to admire these Italian bakery favorites?

Pecan Bars – Do you like pecans? Do you like caramel? OK, then, we are in business.

Peanut Butter Pillows – More peanut butter! This time encased in a chewy chocolate cookie.

Deluxe Chocolate Brownies – OK, enough with the fancy shmancy. Deep down I am a straight up brownie girl, how about you?

It’s a tie between the Magical Coconut Bars (for nostalgia reasons–I used to LOVE Hello Dollies!) and Peanut Butter Blondies. But really, everything looks so good. . . are you SURE I can’t say, “everything”?? ;)

Peanut Butter Blondies followed closely by Fruity Oatbread!
Everything looks mouthwatering, Isa! I can’t tell if you’re a better baker or food porn photographer!
-
March 24, 2009 at 5:31 pm: Arielle
OMG they look orgasmic!! But my choice for recipe HAS to be the “Black and White” cookie. In Germany we call them “Amerikaner” and probably my favourite childhood memory.
-
March 24, 2009 at 5:48 pm: Jimbles
Yes. I too am a straight up brownie girl.
Wait… I think we might be talking about different things.

March 24, 2009 at 6:39 pm: Azzahar
You know what? You are mean and evil. You just post all these photos and it’s not that they’re stimulating, you don’t incite my couriosity or something – you just make me buy your books!! That’s unfair, that’s pure manipulation, satanic socio technique and devilish temptation. I officially hate you.
(so when the Vegan Brunch’s gonna be released?) -
March 24, 2009 at 6:46 pm: lisa (show me vegan)
So many delicious choices! I vote for the Pecan Bars recipe because the photo reminds me of how my maw maw’s pecan pie used to look. Welcome back and take care of that cold.

-
March 24, 2009 at 8:30 pm: Josiane
Why did you have to specify we couldn’t say all of them?!? Of course, I want them all! For now, well, hmmm… one… you didn’t make it easy for us to choose with such gorgeous pictures and tempting cookies! Ok, I could hesitate all night long, but in the end it doesn’t matter at all since I’d be happy with any one of them… so let’s say I vote for the Ginger Biscotti recipe.
You just made me realise that cookies are even more exciting than cupcakes to me. Really, I can’t wait for the book to come out! My cookie jar is ready for the invasion! -

Tough choice! I’ll go with the Magical Coconut Bars, just cause you call them magical and do a good job selling them with the description.
-
March 25, 2009 at 12:49 am: Vegetation
Mmmmm so many yummies! My vote would have to go for brownies (it would go for coconut bars but I suspect condensed milk may be a soy thing plus my non veg other half is a brownie addict!). Mmmm brownies.
Feel better from your cold soon!

Administrative professional’s day is coming up and I’d love to make those pecan bars for my admin. Pecan pie is her favorite, so I think she’d love these if you were so gracious as to share the recipe with us!
-
March 25, 2009 at 3:45 pm: Sarah C.
So tough to choose. I mean, those pb-choc pillows look amazing. But, I have to say, I have missed the holiday favorite I called 7-layer bars, so i’m going to have to vote for those Magical Coconut Bars!!! They remind me of childhood and make my mouth water just looking at them…yum!
Glad you’re back – hope it was great.
-
March 25, 2009 at 4:06 pm: dreamin'itvegan
Such the tease with the cookies. I love them all! I choose pecan bars? And then the peanut butter oatmeal.
-
March 25, 2009 at 4:37 pm: Nancy Nevada
Ooooh.
Can I do a “Vote but if it doesn’t win, chip in my vote for this one instead” kind of vote?
My forkin’ boy-man-thing “has yet to be impressed by a vegan cookie” and grapefruit is, like, his thing, so my vote for love is for the iced grapefruit icebox cookies. But my non-love, secondary vote is for the JESUS CHRIST THOSE LOOK LIKE PALM-SIZED DELICIOUSNESS magical coconut bars…cause they are magical, ya know.
-
March 25, 2009 at 4:47 pm: Kim
Dear heavens, please please please publish the recipe for the coconut bars! Second choice is the pecan bars, but those coconut bars are a must-have!

Peanut Butter Blondies all the way for me. Peanut butter, peanut butter and more peanut butter….what could go wrong? Mmmmm!
-
March 26, 2009 at 1:34 pm: kpepper
I’m pretty sure that posting the recipe for Magical Coconut Bars would have two results. I’d gain a very happy pound (i’m totally ok with that), and I’d give a batch to my boyfriend who would immediately propose. To me or you, I’m not sure. Lets be honest, we’re all coco for coconuts.
-
March 26, 2009 at 2:39 pm: Erin
Holy crap, I wish I could say all of them. Today I’m choosing the deluxe chocolate brownies.

-
March 27, 2009 at 12:03 pm: brooklynkatie
We need the recipe for lazy samoas. The little pixie scouts were out selling their wares, and those stripey devils were trying to get me will their oozey wanton carmelly ways. I need something to say “HA HA! Take that girly, girly scout!”

March 27, 2009 at 4:21 pm: Terry
Regarding the Magical Coconut Bars: These are so good and spot on they reminded me of the bellyaches I had as a kid after eating half a pan of “real” deal. If that’s not an endorsement then what is.
The PB Blondies are pure peanut butter dangerous. Have one for breakfast and you’ll have a hard time wanting to eat anything that’s not a peanut butter blondie the rest of the day.
Isa and I were swimming in a sea of cookies for a week, from dawn till dusk most days. The things we do for you guys.
-
March 27, 2009 at 7:48 pm: dancer5
Magical coconut bars or pignoli! My one attempt at vegan pignoli was ill-fated, so I have literally been waiting YEARS for these!
-
March 28, 2009 at 1:16 pm: Sarah
My vote goes to the PEANUT BUTTER PILLOWS. Lots o stuff looks good up there, but peanut butter rules. Recipe, please.
-
March 28, 2009 at 5:50 pm: Michelle
I know you can’t hear me, but I am shouting “Pignoli cookies!!!” really loud from the rooftop (neighbors be damned– sweets are serious business). I desperately need a vegan recipe for these, since I solely buy eggs in order to continue my tradition of supplying my dad with pignoli cookies. If I could finally eat one of those babies myself, I would praise you forever. Pretty please, with pine nuts on top?
-
March 28, 2009 at 6:04 pm: Laura
Definitely the peanut butter pillows and the brownies. I have not yet found a good vegan brownie recipe and the peanut butter cookies remind me of peanut butter cups.
-
March 28, 2009 at 9:48 pm: Sarah W.
1. Grapefruit!
2. Pillows!I just don’t know how long I can wait for these….
