Consider 2012 “The Year Vegan Cheese Broke.” That’s right. Cheese. With an “S” not a “Z!” This is the real deal; cultured, nuanced, deeply delicious and, well, artisan! It takes some patience to make everything happen, and some practice, but the work isn’t difficult. And it happens to be incredibly worth it. From cheddar to chevre, it’s all here.
