Composting is a pretty vegan thing to do, and you can do it anywhere!  Some apartment dwellers even keep small compost bins under their sinks.  You don’t need a fancy tumbler, a plastic bin with some ventilation holes drilled in or a hole in the ground will do.  In the winter, I collect my scraps in a plastic bag in the freezer so I don’t have to walk out to the bin every time I peel potatoes or whatever.  Composting is pretty easy, but if you want some tips on how to get the best compost and not just a rotting pile of scraps, check out this post.
