 Post subject: Vegan soup beans recipe?

Does anyone have a good recipe for just plain old vegan soup beans? By soup beans, I mean like southern soup beans...the pinto beans with the ham bone and a little onion and water. Google is being totally unhelpful, and thinks I want vegan bean soup recipes and is turning up all sorts of things and it's mostly minestrone, which is totally not what I'm after.

Like the beans that go with "soup beans and cornbread." Those. ;)

Soup beans! Man, I love soup beans. Sometime I need to check out my grandma's recipe for her homemade rolls. We were big on soup beans and homemade rolls instead of cornbread. Still wouldn't turn down a piece of corn bread split open with soup beans dumped on top. I wish I had a good recipe, but I've never even tried it. I think maybe just onions, salt, and a little liquid smoke?

Thanks :) What got me on this was that the "Hard Cider Sauced Beans" from the Great Vegan Bean Book reminded me of soup beans with an apple flavor...and I thought I might try the regular variety with some vegan cornbread soon.

Yep, I just cook pinto beans in the crockpot with water, onions, salt, and add a little liquid smoke at the end. They're better if you wait to eat them on the second day (they thicken up a little that way). If we're going to eat them the same day I made them, I like to use an immersion blender on them for just a bit make them a bit thicker.
