I've been soaking cashew nuts for a week because I keep forgetting about them (oops). They are/were intended for a cashew cream-thing from Isa Does It. It is now the evening of the 5th day of their soaking. Are they safe to use in the morning? Discuss!

Were they soaking in the fridge? I'd probably use them if they were. I mean, I'd be okay eating a cashew cream that had been in the fridge for five days, and that's basically the same thing... right?

How long does homemade Kimchi last in the fridge? I used the recipe from VEW, but modded it so that it was heavy on the daikon radish and carrots. It's been there about 9 months...

Help! Some of the jars of sun-dried tomatoes in olive oil I made last month have not caught the seal, and two of the jar tops are rather blown up, like a gassy belly and have one tomato piece poking out of the oil and being a bit moldy.
If I toss the moldy tomato, would the rest which are under the oil be ok?
And if not, what about the jars that simply aren't sealed?

I think I would toss those. Canning fails can harbour botulism, so I really wouldn't take a chance!

Definitely the gassy ones. I'd be nervous about the other ones too since you mentioned they didn't seal properly, but I may be overly cautious.

i would dump any jars that don't look 100% normal. puffy tops, mold, whatever. and even the ones that did seal, since they probably were all made in one batch, i would be careful and the first time i ate it, only eat a little, just in case.

It's probably fine to eat in terms of safety, but might not be as palatable anymore. Because it continues to ferment (extremely slowly) in the fridge, it's possible that your vegetables will have become quite soft, and it may not be as delicious as it was. The texture will likely be a bit off at least, and it may have a more fermented taste than you might like. Also, if any of the vegetables have been above the level of the brine, they may have gone mouldy. If there isn't any surface mould, great!

Anek - yeah, definitely ditch those! Botulism is scary!

Thanks all! We already ate a jar of the ones that had sealed before we noticed the puffy ones, and we are both still alive and fine, so I guess I can keep the sealed ones and throw out the others. Thanks again!

Homemade seitan from IDI that's been in the refrigerator for 8 days in the cooking broth - okay or should I toss it? The half I used was really good, wish I'd been smart enough to freeze the rest.

What if your mom gave you a plastic bag with two apples in it so you put the whole bag in your fruit bowl
And then you forgot about them for three days
And then you were like, oh yeah, I have these apples!
And then you realized that your mom had also put a zip loc back of black beans in that bag and some of the rotting bean goo had gotten on the apples

I might peel them before I eat them.
