Can anyone recommend some recipes for soft frosted sugar cookies. I want to make some X-mas cookies this year, but we don't like hard cookies.

I really like the recipe from The Joy of Vegan Baking. It also has a really good recipe for royal frosting.

I thought the key to softer cookies was just baking them a bit less long.

I like the buttery lemon biscuits from Vegan With a Vengeance (in the book they're called cookies, but my rule of thumb is that it's a cookie if you blob spoons of it onto a baking tray, and a biscuit if you roll out the dough and use cutters).

I always use Vegan Heartland's recipe. They actually get better after a few days, which makes them good for crazy holiday baking times.

I think the texture of the pistachio rosewater cookies in v'con is just like the soft sugar cookies I used to love from the grocery store. I haven't tried it yet, but I'm pretty sure you could easily modify the recipe to be a lovely soft vanilla sugar cookie. But I don't think you could make cut outs with them.

If you frost them they will also soften up as the cookie absorbs some of the moisture from the icing. I always make the cookies and ice them then let them sit all night before eating any of them.

I made Carly's (from A Profound Hatred of Meat) frosted sugar cookies this year, and they were a glorious revelation. I underbaked them a tiny bit to make them soft enough (and they did soften some more after being iced and sitting overnight). They are the best sugar cookies I have made as a vegan. They were identical to the (non-vegan) sugar cookies I ate growing up, and they made me so very happy.
