 Post subject: Storing 25 lbs of dried kidney beans?

I picked up a 25lb bag of dried dark red kidney beans at the discount store yesterday, at a great price.

Does anyone have any suggestions on how to store them? I store smaller amounts in quart canning jars. Also, any favorite kidney bean recipes would be appreciated!

Depending on how quickly you will use them, you might want to store some in the freezer.

My favorite things to do with them are minestrone soup, and chili. In chili I like to mix kidneys with pintos and sometimes also black beans.

There are some delicious Indian dishes that use kidney beans. I've eaten but not made these, so I can't point you to anything, but it's worth researching.

I think almost any bean can be substituted in the v'con chick pea cutlets, so you could probably make kidney bean cutlets.

Now I want kidney beans!

Bugs can get into dried beans (or the eggs may already be in the beans), so it is a good idea to keep some in the fridge or freezer, especially in warmer weather. If you want to keep some in plastic bags in the pantry, it's probably best to double bag them and/or use thicker freezer-type bags. Glass jars are probably the best, but large plastic tupperware-type containers should be ok too, unless you have a serious bug problem. Some people claim bugs can get into sealed plastic container somehow -- I think it is more likely that the insect eggs are inside the product and hatch in the proper conditions.

Those sterilite containers can have a strong plastic odor, which can be absorbed by food, so I would just be cautious. The type that are meant for food are probably a safer bet. I had some chocolate that was in a sterilite container for a while, and it definitely tasted strongly of plastic.

if you look up stuff on survivalist storage, you can get a bunch of 2 liter soda bottles and some oxygen absorbers and store them for a pretty long time. (use one 100cc absorber per liter)

Frosting bucket from the grocery store (ask at the bakery)...and follow some of those survivalist hints, like oxygen absorbers, mylar liners, etc.

Thanks for all of the suggestions! I'm looking forward to trying the recipes, especially Indian. I didn't notice they use kidney beans, and I love Indian food, so yay!
Oddspongeout, I've been looking at that red beans and rice recipe. Now is the time!
The beans are still in their bag, but now there is hope for a better home for them. :)

I love buying things in bulk, but have in the past had problems with pantry moths. Now I'm paranoid and keep my food in bug-proof containers. For something that you have that much of, I'd recommend getting a pest-proof pet food bins. Most pet supply stores sell them. They are rather pricey ($20-$35) but are worth it if you do a lot of bulk buying. Mason jars are also great for storing dry goods, but they're not as large as the pet food bins.
