I am going to make some vegan chapatis and parathas. What is the best sub for ghee? I have EarthBalance, plus peanut, coconut, grapeseed, walnut, almond, canola and EVOO. I may have some vegan shortening somewhere in the house too.

All ghee is is clarified butter, so I would imagine you could clarify earth balance. I've never made it, but I think you just put a whole bunch of butter in a small sauce pan, melt it, then scrape off the thick stuff on the top which leaves behind the clarified butter.

There is vegan ghee called Dalda. It tastes like any normal veg shortening.

I think ghee has a higher smoke point than butter, so you probably don't want to go with the EVOO. I usually sub canola or EB, but I'm sure peanut oil or coconut oil would also be great. You may have to experiment and find out what you like best. Good luck kaenhu and report back on what you end up using and how it works!

For curries I've always seen vegetable or canola oil. I don't know about bread, though...

Thanks everyone. I ended up using coconut oil because I ended up with a lot of it and rarely use it. The chapatis turned out great. I am going to make some more tonight. I am eating them now with my veggie curry.
I'll experiment and use canola oil and next time I am at the Indian grocery store I'll get the vegan ghee. I have lots of recipes that use ghee.
