1) Soaked Cashews

The motto of 2011 was “Always Be Soaking.” There were lots of props for the cashew this year, especially in cream form. Just place a cup in filtered water and soak for at least 2 hours. Then drain and blend (forever) with 2 cups water, or two cups vegan milk for sweet applications. Use as you would heavy cream. Lagusta of Lagusta’s Luscious shews, too! She says “I always have cashew cream on hand frozen in small containers so I can make a mac & cheese or other saucy dish super quickly.”
