26) Dumpling squash

Of course there’s butternut, acorn and pumpkin, but 2011 saw the ever growing winter squash horizon expanding and expanding. Dumpling squash is a wonderful variety because it’s sweet like butternut, but comes in convenient acorn form. Perfect for stuffing! To roast: just hack in half across the waist and place face down on a parchment lined rimmed baking sheet. Bake in a preheated 425 F oven for about 30 minutes.
