53) Quinoa Sushi

Quinoa has been popping up everywhere the past few years and to us vegans (and the Incans) it’s old hat. But in 2011, we loved the fusion of Asian and Latin American ingredients, and the point couldn’t be driven home any better than in quinoa sushi. The secret to using quinoa in sushi is to overcook it so that it gets nice and sticky. Use 1/4 cup extra water when preparing the quinoa and once it’s tender, remove the lid, add another 1/4 cup water or so and stir (like risotto) until creamy.
