Curried Split Pea Soup

This is a nice and simple yet flavorful soup. Serve it as an entree with some jasmine rice or as the perfect starter to an Indian meal. You will be suprised and relieved at how easy it is to prepare.
Equipment:
Soup pot with lid

Ingredients
16 oz dried split peas
1 Tablespoon olive oil
1 medium white onion, diced small
2 tablespoons fresh ginger, minced
3 cloves garlic, minced
8 cups water
1 carrot to grate in at the end (optional)


Spice blend
2 teaspoons curry powder
1 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon ground cardamom
2 teaspoons salt
generous pinch cinnamon

Directions
Saute the onions in the olive oil at medium heat for about 5 minutes. Add garlic, ginger and spices. Saute 2 more minutes.

Add the water and stir well. Add the splitpeas. Cover and bring to a boil.

Bring heat back down to medium, let soup simmer for about an hour, until peas are tender. Grate in the carrot and serve. You can garnish with fresh cilantro if you have it on hand.

I fed this to my husband last night and he almost had a connipition he loved it so much. He ate three bowls and declared it magnificient. I ate mine with hunks of homemade bread and enjoyed it thouroughly. Well done!

Absolutely delicious! Even my 5 year old and 15 month old loved it! It is simply awesome.

I was so happy I easily found all the ingredients in my cupboard for this recipe! The split pea has a terrific flavor, and my husband said it was a lot better than traditional split pea soup!

This was pretty tasty, nice flavor and super easy to make. I added a couple of leftover carrots and new potatoes, next time I think I'll puree half the soup to give it a different texture.

Very tasty, easy to make, and inexpensive! Plus, the whole kitchen smelled wonderful while it was cooking. I pureed it for a creamier texture and a bowl made for a filling, lovely meal.

This soup is so lovely. It makes the kitchen smell wonderful, and I was so excited to have such a delicious homemade soup in so little time. I tried the recipe several weeks ago (served over rice and with some baby spinach and tofu), and then today I found myself desperately wanting it again. I can't wait for dinner.

This was my first recipe from Vegan with a Vengeance. I forgot to put the ginger in, so I exchanged it for some chili. It turned out very delicious. I will freeze about half for later.

I wanted to make something a little different from the usual soup/chowder/stew, but easy to put together, too. Everything everyone else said about this soup is true! It is delicious, satisfying, really good over rice; I will be making it regularly and enjoying it lots.
