Lemon Corn Waffles w/ Blueberry Sauce

How do I even begin to describe the heaven that is these waffles? They are just a little crispy, a little sweet and the marriage of blueberry and lemon just cannot be beat. And that rhymes! Do try these and don't let my poetry be for naught.

Equipment:
Waffle iron, whisk, 2 mixing bowls
Ingredients
Dry ingredients
1 1/4 cups +2 Tablespoons flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cornmeal
Wet ingredients
1/4 cup corn oil (veg or canola oil will do)
2 cups soy milk
1/4 cup soy yogurt
zest and juice from 2 lemons
1/4 cup sugar
Directions
Preheat waffle iron.
Sift together the dry ingredients in a large mixing bowl. In a medium bowl, mix together all the wet ingredients (including sugar and lemon juice/zest) until well combined. Create a well in the center of the flour mixture and slowly blend in the wet ingredients until combined.
Make your waffles according to manufacturers directions. I use a belgian waffle iron and 1 cup of batter per waffle works for me, but you should consult your directions. For crispier waffles, let cook 30 seconds to a minute longer than the directions suggest.
Serve with blueberry sauce or pure maple syrup. |

Wonderful! I made these in a heart shaped waffle iron and it made 4 waffles. I made them for my four year old son who has an egg allergy and he devoured them. Thank you! I will review the blueberry sauce seperately, it was delicious, too. |

These were the best pancakes we ever had! Yes pancakes, because we don't have a waffle iron but that didn't stop us from trying this recipe. The crispiness from the corn meal, and lemon zestiness mellowed within, with the beautiful blue syrup from heaven... it's amazing how wonderful a recipe can still be, without eggs or dairy. You should have your own show on the Food Network! |

waffles are quite possibly my favorite food.
these were quite possibly my favorite waffles ever--vegan or non.

Hi, I'm a french vegan woman & I've just tried those fantastic waffles for mother's day. Absolutely delicious !! Nobody noticed they were vegans. Instead of soya milk, I've used homemade soya yogurt & I add a bit less than a 1/2 cup of water to help the dough to be less thick.
Great with a nice chocolate soya cream !!! |

Well these didn't work in the waffle maker... they didn't seem to cook in the middle. But it might be because the waffle maker is a mega cheap-o brand. I can't give this a bad review because it made amazing pancakes! And the blueberry sauce rocks! |

I've made this several days in a row now. Fantastic!!! Also good just with Earth Balance and maple syrup (and maybe a little lemon juice squeezed on top). |

Wow, these are delicious. This morning, I had a sudden craving for waffles and went searching online. I'm so glad I used this recipe- I halved it and it still made 4 and a little extra good-sized waffles. I had no soy yogurt, but a little more soymilk and a little vegan margarine seemed to make it work. Plus, I reduced the sugar because I was already using vanilla soymilk and I don't like things super sweet. Turned out wonderfully, though stuck to the waffle iron a lot. My omnivore mother loved this recipe, too. I'll definitely try to get my hands on some soy yogurt to make this again! |

The best waffles I've ever had. I went all out and made the Macadamia Crème from Vegan with a Vengeance and it was divine, though it would still be fantastic without the crème. The lemon flavor was a bit more subtle than I expected, so I may add more zest in the future to suit my taste. I really liked the crunch that the cornmeal gave to the waffles. I halved the recipe because there were only two of us eating and it made three Belgian waffles. Next time, I’ll just make the full batch so I can have leftovers. |

Sooo good. I added some frozen corn into the waffle mix. Yum yum - hubby and I have been toasting the leftovers for breakfast all week. One of the best breakfast recipies ever. |
