Pumpkin Chocolate-Chip Squares

| I am not vegan, but a good friend of mine is so I am always trying to make treats we can both enjoy. I found this recipe in Martha Stuart's Everyday Food, but of course I made a few changes to make it vegan-friendly. |

Equipment:
9 by 13 inch baking pan
foil
Ingredients
2 cups flour
1 tablespoon pumpkin-pie spice
1 teaspoon baking soda
3/4 teaspoon salt
2/3 cup of Canola oil
1 1/4 cup sugar
1 tablespoon flax meal
3 tablespoons water
2 teaspoons vanilla extract
1 cup canned pumpkin
1 12 ounce package semisweet chocolate chips
Directions
Preheat oven to 350. Line pan with foil leaving an overhang on all sides. Wisk together flour, pie spice, baking soda and salt (save for later)
Mix oil and sugar, then add vanilla, water and flax meal. Add pumpkin, then mix in flour mixture. Add chips.
Spread evenly in lined pan. Bake untill edges pull away from sides (35-40 mn) and it is clean knifed.
Cool completely and lift from pan using foil overhang. Cut and serve! |

I made these the other night. When they first came out of the oven they were crumbly and cakey, but the next day they were much more solid and bar-like. they were delicious, but i wish the pumpkin flavor was a little stronger. |

These are great!!
I used EnerG egg replacer instead of the flax & water and I upped the pumpkin pie spice.
I about died when I first tasted them. Definitely worth 4 soybeans!! |
