Zucchini Cake

| After choosing to go vegan, the one thing that could still get me drooling like a pooch was the idea of my grandma's zuchini cake. I was so excited to find the only real substitution it required was for the eggs. I'm writing the recipe to include bananas here because it yields identical results. (no really, even grandma couldn't tell!) If you're crazy about chocolate like me, go ahead and put the whole bag in! enjoy! |

Equipment:
bundt pan, mixing bowls
Ingredients
2 1/2 cups grated, peeled, fresh zuchini
2 ripe bananas, mashed well
1 cup canola oil
3 cups flour
2 cups sugar
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 tsp. vanilla
1 cups ground walnuts
1 cups semi-sweet chocolate chips
Directions
In medium sized mixing bowl, combine zuchini, bananas, oil, and vanilla. Stir well or beat with electric mixer if you want to be fancy. In large bowl, combine all remaining ingredients except chocolate. Add wet mixture to dry, mix well and add chocolate chips. Pour into lightly greased and floured bundt pan. Bake at 350 for 45-60 minutes, until toothpick or knife inserted comes out clean. Let cool upright 15 minutes, then invert onto cooling rack. Allow to cool 30 minutes before tasting. Enjoy! |

This is a wonderful recipe- much lighter than any zuchinni bread I've made. Even my non-vegan husband enjoyed this recipe. |

Made this lastnight, making a few ajustments. First, I didn't have enough walnuts, so I just added a 1/2 cup more chocolate chips/chunks. Then I didn't have a bundt cake pan, so I divided the batter in two bread pans. Really good, moist, but maybe a little too chocolaty; that's my fault. |

This recipe is so good i made it for a party and it was gone in ten minutes!!!!! I made it without bannanas and it still turned out great!!! I recomend it for everone!!!!!!! Even my baby cousin liked it!!! And he is 2! |

Superyummy! Didn't have a bundt pan so I used 2 9-inch cake pans and adjusted the cooking time since one of the pans was only half full...it still came out moist and perfect ^_^ Forgot to buy choc chips so I added some cocoa powder and nutmeg with the dry ingredients. Brought it to work and my dairy loving officemates couldn't tell the difference >:} |

This is a great YUMMY recipe. I have also used diced apples or cranberries instead of zuchinni and it's also quite good. Such a great cake base!! |

This is a great recipe. Super moist. I think it tastes more like banana bread than zucchini, but I like both so no complaints here. I didn't have a bundt pan so I turned half of it into muffins and baked the rest in a loaf pan, adjusting cooking times accordingly. I'll definitely be making it again. |

If you're wondering if a vegan cake can rise properly, this is the first recipe to try! It's excellent - you can taste the banana but so what? Bananas are nice and what's so great about tasting a chicken's period anyway?
My variations: I didn't have any chocolate chips so I just used cocoa and it was still nice - I added a tiny bit of soya milk to compensate for the added dryness.
Also, I used ground almonds instead of ground walnuts as that's what I had.
And I made strawberry icecream (recipe on this site) - they go really nicely together.

I meant to add - when preparing the cake tin, you can use cocoa instead of flour to dust it, which avoids having white bits on top of the cake when you turn it out. If you cover the cake with frosting it doesn't matter but it's nice to have it plain too. |
