Nana's Plum/Peach cake

| This is something my grandmother used to make all the time in the summer, with either ripe peaches or italian prune plums and what do you know it came in handy because my boyfriend is a vegan! Now im telling you guys that are obsessed with whole wheat , this is made with white flour and it tastes best that way. its very simple. This is one of the best vegan desserts you can have in my opinion, so keep the recipe the way it is if you can. |

Equipment:
you will need a shallow baking pan, metal/coated is preferred. should be nine by four or thereabouts. you can also make it a corning ware dish if you have nothing else, or a round shallow tart/quiche dish. as long as the crust when patted down is at least an inch thick (but dont make it too thick) you are ok
Ingredients
1 1/2 lbs of peaches or italian prune plums as ripe as can be (you can make up for it if they arent, and the plums arent usually available til july or august)
1/2 cup white sugar
1 stick of margarine, I use corn but use whatever you like
It helps make it easier if you let the margarine warm up a bit, not melty but a LITTLE soft.
3/4 cup white flour
cinnamon and sugar mix (small amount)
preheat oven to 350
In a large bowl , mix flour and sugar. Cut the margarine stick in a few large chunks, throw it in the flour sugar mix and start working with a fork or pastry bleander to make crumbly butter sugar mix (largest pieces should be no bigger than peas). When done, pour the mix into the baking pan and pat down evenly with fingertips.
Now, cut prunes or peaches into quarter size pieces. You dont have to peel them, unless skin freaks you out. Pat them gently onto the crust in rows,skins in the crust. If they are not ripe at all, sprinkle some water and a cinnamon sugar mixture on top, you should sprinkle with cinnamon sugar if they are ripe anyway, just not as much.
And thats it ! pop in the oven for twenty to thirty min, or until the corners are starting to turn slightly goldne (you dont want this crust turning all brown, if it does, you have overcooked it)
Let it cool, eat and enjoy!
