Cinnamon-Raisin Quick Bread

| Slice it nice and thick and eat alone, or toasted with margarine or jam or apple butter, and with a cup of tea or after lunch or a light dinner. Enjoy! |

Equipment:
loaf pan
Ingredients
1 1/2 cups flour (I used spelt)
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 teaspoon cinnamon
1 cup quick oats
3/4 cup brown sugar
3/4 cup raisins
1/4 cup apple juice (I used orange juice)
1 1/4 cup applesauce
1/4 cup vegetable oil
2 tablespoons ground flax mixed with 6 tablespoons water
1/4 cup soymilk or rice milk
Directions
Preheat oven to 350 F.
Grease and flour or spray an 8 1/2" x 4 & 1/2" loaf pan. Soak raisins in
apple juice.
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, oats, and brown sugar. Add applesauce, oil, flax slurry, and soymilk. Stir until just combined. Mix in raisins and juice. Pour batter into
prepared pan. Bake for 50 - 60 minutes, or until a knife comes out clean.
Remove from pan and let cool. |

the flavor of this bread is excellent. the bread baked up in a beautiful loaf. i dribbled crushed pecans on top to add an extra crunch and used raspberry applesauce for an extra kick. while the bread itself was moist, it was somewhat crumbly as far as cohesion. i don't know what would solve this, perhaps a little more of the flax seed slurry? |

This bread is so good! I was afraid it was going to come out crumbly so instead of flax seed slury I used 3 table spoons of soy yogurt. It was perfect! |
