Ginger Peanut Soba Noodles

Equipment:
Ingredients
One package soba noodles
1/3 cup soy sauce
1 Tbsp toasted sesame oil
1 Tbsp peanut butter
1 Tbsp water
1 tsp ginger, grated
1 small clove garlic, minced or pressed
1 head broccoli, steamed
1 red or green bell pepper, thinly sliced
sesame seeds, chopped peanuts, cilantro & chopped green onion for garnish
Directions
Prepare noodles as directed on package.
Drain noodles. In a small bowl combine soy sauce, sesame oil, peanut butter, water, grated ginger and garlic. Add to noodles and toss thoroughly to coat. If the sauce seems a little too thick, add some pasta water a tablespoon at
a time until it looks like it will blend nicely with the noodles and not glop.
Top generously with chopped peanuts, cilantro, scallions, sesame seeds, and steamed broccoli.
Eat hot or even chilled or room temperature. For a heartier meal, serve with a small bowl of miso soup. |

this recipe was great! I used it last night when I cooked a meal for the vegan Co-op at my college. Everyone loved it...it sauce is nutty, spicey, and sweet all at the same time. I used buckwheat soba noodles and they worked really well. |

My only complaint was that the sauce was a bit too salty for me, even though I used lower sodium soy sauce.
Otherwise, fantastic! A nice contrast of warm, rich noodles and crisp, light veggies. I added some pressed, cubed firm tofu, and a squeeze of lime juice at the end as well. YUM! |

This was pretty good! It wasn't too hot for my bland self and not too mild for my spice-loving dad.
I would reccomend a little more peanut butter, though.
Also, speaking as someone who LOVES salty food, definitely use a lower sodium soy sauce. |
