Eggless Deviled Egg Tofu Salad

This recipe is modified from Chef Deb's of Vegsource.com recipe. If you have not experienced the power of Chef Deb, she'll answer any and all vegetarian cooking questions that you may have. Sometimes I add a little vegan mayo to it, when I'm craving something a little fatty, but it's good as is!
Equipment:
Large pot, potato masher or strong fork

Ingredients
1 lb fresh firm waterpack Tofu, drained
1/2 small red onion, diced very small
1 quart water
1/4 cup white vinegar
1/4 tsp salt
1/8 tsp Indian black salt (optional -- adds "egg" flavor)
1/8 tsp turmeric
2 tsps spicy mustard
1 tsp hot sauce, or to taste
1/8 tsp paprika
Salt to taste

Directions
Cut Tofu into small dice.
In large pot, put water, vinegar, and pinch of salt.
Bring to boil.
Add Tofu cubes, bring to boil again, and turn to medium simmer.
Simmer 15 minutes.
Drain Tofu.
Sprinkle with black salt (if available), and mix well.
Put 1/3 of Tofu cubes in a bowl.
Mash this Tofu. Mix in turmeric, to make "egg yolk".
Mix in mustard, hot sauce, and paprika.
Add remaining 2/3 of Tofu cubes, and diced onions and mix gently.
Serve on bread, with mayo of your choice, lettuce, etc.

This was great! Just like regular egg salad, but cruelty free! Very easy to make and very tasty. I didn't have all the ingredients, so I'm sure that would make it even better-I didn't have the black salt or paprika, but it still tasted yummers! Thanks for the recipe! Rock on!

this is a good recipe, very tasty! i also added an eighth of a teaspoon of cumin...turned out really well! it is kinda crumbly though so if you are looking for a thick, kinda spreadable egg salad you should use veg mayo, or something to keep it together :)

I was really excited to make this. I really like the "yolk" part, but was not a fan of the tofu that was boiled with the vinager. I guess my only real problem the the recipe was getting the flavor throughout all of the tofu. It looks really pretty when it is done. I really think this recipe has great potential and recommend people trying it out.

Maybe if I make more "yolk" and mash in through the rest?
any suggestions?

I just made this and thought it was pretty good. I added a little bit of veg mayo and mashed 1/4 of an avocado in with it. Mmmmmmmmm.

I think over the past 10 years I've tried 15-20 variations of faux (tofu) Deviled Egg dishes, and this by far is the best. The secret, IMO, is the Black Salt, an amazing addition. Open the jar and the (actually pink) salt smells like boiled eggs.

interesting fact: the black salt smells/tastes like boiled eggs due to sulfurous mineral deposits in the salt!
