Mocha Chip Muffins

| I don't think I need to tell you that Mocha Muffins are amazing. Do I? OK. Mocha Muffins are amazing. |

Equipment:
1 Muffin tins and paper liners
Ingredients
1 1/2 cups all-purpose flour
3/4 cup sugar
1/4 cup baking cocoa
2 teaspoons instant coffee
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup soy milk
1/2 cup canola oil
2 tablespoons soy yogurt
1 teaspoon vanilla extract
1/2 cup chocolate chips
Directions
Preheat oven to 375 F. Line 12 muffin tins with paper liners.
In a large bowl, sift together dry ingredients (flour through salt).
In a seperate bowl, wisk together wet ingredients (soy milk through yogurt) until emulsified.
Pour wet into dry and combine until dry ingredients are moistened. Fold in chocolate chips. Fill muffin tins almost to the top. Bake 18 - 20 minutes, until a toothpick inserted into the center comes out clean. |

these muffins are really great. I was really impressed with their texture. i didn't use coffee-- just extra chocolate, because I didn't have any, and they still turned out fine. |

These were really yum...the only thing was that they didn't taste mocha-y at all. I've found that it's really hard to get baked goods to keep their coffee-flavouring through the baking process. Unless you use liqueur or possibly an extract of some sort? Any suggestions? |

I fed these to every non-vegan I know and said nothing, they loved them. I told them after and they thought differently about trying vegan food. |

So I made these today and, being the genius that I am, forgot to add the baking powder. What resulted was a dense, wrinkly cross between a cookie and a brownie (a "brookie", if you will). They are the most delicious mistakes I've ever made, I must say. But then I made another batch, this time with no accidental ommissions, and Sweet Baby James, what a scrumptious muffin! |

Made these today in mini muffin tins (got exactly 30 muffins out of it), using mini chocolate chips and cutting down on the sugar a bit. Sooo fluffy and yummy. Using instant coffee, the flavor is pretty subtle, which many people like. However, I'd prefer it stronger so next time, I'll use that coffee- or mocha-flavored Silk soymilk in place of regular. These would make great frosted cupcakes as well. Thanks for sharing this recipe ^_^ |

I tried these muffins at a vegan potluck near UCONN Storrs. They were amazing. I swear I tasted a hint of peanut butter...anyone else?
