This recipe, born by craving, delights all. These are easy, easy, easy. And best of all tasty. Make for your roomies, at an informal brunch or as a treat for your self, at breakfast or as a midnight snack. Be careful once you've added the PB. When PB hits the pan and starts to cook, an awful smell ensues.
And serve'em hot. Serving amounts are easily adjusted. |

Equipment:
mid-sized frying pan
cutting board (opt.)
knife
spoon
Ingredients
4 corn tortillas (store-bought, or home-made)
2 bananas
2 T. peanut butter (not J*ffy)
2-4 T sugar (opt.)
1 T. oil (with a mild flavor)
Directions
1. Cut up two bananas into slices (3/4 in. thick-roughly).
2. Oil and heat pan to medium heat.
3. Fry up half a banana of slices.
4. When the bananas are a nice golden brown, scoop onto plate and put a tortilla in the pan. Fry tortilla for 30 seconds on each side.
5. Fill the tortilla with the fried bananas (placing all the bananas on one side) while still in the frying pan.
6. Drizzle one tablespoon of PB and one T. of sugar over the fried bananas.
7. Fold tortilla in half. Continue flipping and fry to desired crispiness.
8. Serve and repeat process... until full or out of materials.
Variation: Try using plantains instead of bananas. They take longer to fry and aren't as sweet, but have their own seductive power. |
