Japanese Fried Tofu

| This is an easy and delicious recipe that will turn heads. Serve it with sticky Japanese short-grain rice. It works best with firm tofu made by Hinoichi or Frieda's (non silken!). The ingredients for the marinade can be found at any well stocked Asian grocery store. Feel free to double the marinade. |

Equipment:
a big nonstick skillet
Ingredients
1 14oz package firm tofu
1 tsp canola or peanut oil
1/4 stick vegan margarine
marinade:
2 green onions (scallions), thinly sliced
2 Tbsp sake or other dry rice wine
2 Tbsp shoyu (Japanese soysauce) or tamari
2 Tbsp mirin (sweet rice wine)
Directions
1. Remove tofu from packaging, rinse, and gently squeeze out excess water. Wrap tofu in several layers of paper towels, then put a large chopping board on top with some cans on for weight. Allow for the excess water to be absorbed from the tofu.
2. Make the marinade by mixing the sake, shoyu, and mirin in a shallow bowl. Add the spring onions.
3. Unwrap the tofu and cut it into 2" cubes. Let it marinade for about 15 minutes, flipping once to ensure both sides are marinaded.
4. Remove tofu and blot off excess marinade with a paper towl. Keep the marinade on the side for now.
5. Heat up the skillet on medium high. Add the oil and margarine. When the margarine melts, turn the heat down to medium. Now add the tofu pieces one by one. Don't double layer. Fry each side of the tofu until it's golden brown, about 5 minutes a side. Removed the tofu once it's done.
6. Finally, pour the marinade into the same pan and cook until it's thickened. Depending on the margarine, the sauce may not thicken properly, but you can add a few pinches of cornstarch at a time until it thickens to your liking. Pour the thickened marinade on top of the tofu. Serve hot with rice. |

Are you kidding me? This was delicious!!! And how gratifying was it that I googled "fried tofu marinade" and the second recipe that came up was the one I tried and it was from a vegan site (I am vegan)!
I added shitake mushrooms to the sauce and then used chili-garlic sauce as a condiment. Absolutely delicious! Thank you, Doug. |

um...heh...i hate to sound pessimistic, but my homemade fried tofu experience wasn't quite as nice. ha. i think medium was too high to cook it on because mine started cooking way too fast and i guess im just not a good chef or something but im not sure they came out alright....and the sauce....i tried making it but the pan was so hot [now on med-lo] that it gooed up a little too fast also so it was like uber-salty.....BUT all in all, it was still pretty scrumptious...it tasted similar to vietnamese fish in a clay pot.
but, from an average joe's perspective, you're probably better off with some morningstar fajitas with your own choice of sauce.
good recipe though! im eating it now..yum! |
