Pumpkin Chocolate Chip Cookies

| I can't believe I am submitting this. It's my secret weapon. I know it makes a bajillion cookies, but I tend to bake these as gifts. Note: these do not expand very much in the oven, so they may not look done when they are. |

Equipment:
Plenty of room, cooling racks, 2 bowls, mixers
Ingredients
1/2 cup shortening
1-1/2 cups sugar
1/4 cup soy yogurt (vanilla or plain)
1 cup canned pumpkin
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 cup vegan chocolate chips
1/2 cup chopped walnuts (optional)
Directions
1. Preheat oven to 350 degrees (F; 175 degrees C). Grease cookie sheets.
2. In large bowl, cream together the shortening and sugar until light and fluffy. Beat in the soy yogurt, then stir in the pumpkin and vanilla.
3. In another bowl combine the flour through the cinnamon.
4. Gradually stir into the creamed mixture
5. Stir in the walnuts (if using) and chocolate chips.
6. Drop dough by teaspoonfulls onto cookiue sheets
7. Bake for 15-20 minutes, until light brown or toothpick comes out clean.
8. Cool on wire racks. |

I have made these cookies for every occasion since last Christmas. I'm talkin' birthdays, thank you's, holidays, you name it... and everyone loves them, not just vegans. The trick to making them super moist is to use pumpkin baby food instead of canned pumpkin. Delicious! |

I baked these cookies for Christmas and no one even knew they were vegan. Everyone ate them up. They do make a lot of cookies but there was not even one left at the end of the evening. |
