Gujarati Green Beans

I originally found this recipe in Madhur Jaffrey's Indian Cooking, and have since modified it to my tastes. It makes an excellent side dish for Indian meals.
Equipment:
Mortar and pestle
Medium pot
Large frying pan


Ingredients
1 pound fresh green beans
3 tablespoons vegetable oil
1 tablespoon whole black mustard seeds
4 cloves garlic, peeled and minced
1 dried hot red chili
3/4 teaspoon salt
1/2 teaspoon sugar
freshly ground black pepper

Directions
Wash, trim, and cut the green beans into 1-inch pieces.
Blanch the beans by dropping them into boiling water and boiling for 3-4 minutes, until tender.
Drain and rinse under cold water.
Heat oil in a large frying pan over medium flame.
Add mustard seeds when the oil is hot. Careful, they'll pop and splash almost immediately if the oil is too hot.
Once the seeds start to pop, add garlic.
Stir until the garlic is browned.
Add the crushed red pepper. Use less than the whole pepper if you want a milder dish.
Add the beans, salt and sugar and stir.
Turn heat to medium-low, stir and cook for 7-8 minutes, until the flavor is absorbed.
Add black pepper to taste, mix, and serve.

This is INCREDIBLE. I have never had green beans this yummy... and I loves me some green bean action!

The mustard seeds and the garlic add so much to this. Yum!

Wow, this was great! I skimped on the recipe-no chile, mustard seeds, or pepper, and it was really good! I used frozen green beans with powdered mustard instead, and not that much garlic. Still, I would cook this anytime. Oh, and I used sesame oil instead.

Can't wait to taste what it's like after using the right ingredients!
