Smoked Almond Gravy

Makes 2 cups


I always sit on the couch and eat way too many smoked almonds. I was looking for a way to parlay that activity into brunch, and I found it in smoked almond gravy. This is one of those times where I think “Thank god I thought of this!” instead of “I wish I had thought of that!” Really rich, smoky gravy that is just perfect with biscuits. Not to mention it only uses a handful of ingredients and takes a handful of minutes. Smoked almonds are available in most supermarkets these days. Serve with Herb Whole Wheat Drop Biscuits.

2 cloves garlic
1 cup smoked almonds
1 1/4 cups water
2 tablespoons soy sauce
2 tablespoons corn starch

Chop up garlic in a food processor or blender. Add the almonds and process into fine crumbs. Add the remaining ingredients and process until relatively smooth.

Transfer to a sauce pot over medium heat. Stir often until thickened, about 5 minutes. That’s it!
