I think chick’n and rice soup is every bit as good as chick’n noodle, and sometimes even better when buttery jasmine rice is involved. This vegan chicken and rice soup has golden browned chick’n, tender carrots and celery, plenty of garlic, fresh dill and poultry seasoning with sage and thyme. As it cooks, your kitchen fills with the most nurturing aromas, like someone you love is cooking for you. And that someone, dear reader, is you.
It’s also super easy and ready in under an hour. The rice cooks right in the broth, soaking up all that herby flavor and giving the soup a lightly creamy consistency, so there’s no separate pot to deal with. Fresh dill goes in at the end so it stays bright and green. Basically, a big hug in soup form without anyone actually touching you.
Vegan butter gives the broth a little extra body, but you can use all olive oil if you prefer. It’s gonna be good!
I use my homemade Chick’n Seitan, but any vegan chicken will work. Check out some ideas below!
Swaps for the Chick’n Seitan
If you don’t have chick’n seitan on hand, there are lots of other options.
Store-bought vegan chicken: Any brand you like will work. Brown it first so it gets some color and holds its texture in the broth.
Tofu: Use extra firm, thinly sliced or cubed, and brown it in a cast iron pan with olive oil before adding it to the soup.
Yuba: Also called tofu skin, it has a soft, layered chew that’s lovely in soup. Slice it into strips and give it a quick sear. If you use dry, just rehydrate it first.
Soy curls: Soak them in warm broth for about 10 minutes, squeeze them out and brown them in olive oil. They have a shreddy texture that’s really close to chicken soup chicken.
Oyster mushrooms: Tear them into strips and sear them in a hot pan until browned and a little crisp at the edges. They’re meaty and savory.
Chickpeas or white beans: No browning needed here. Just rinse and drain a can and stir them in with the rice. Chickpeas are my favorite, but cannellini, great northern or navy beans are all nice too.
Tips for the Best Vegan Chicken and Rice Soup
Use a wide pot. If your pot is wide enough, like a Dutch oven, brown the chick’n directly in it before making the soup. You’ll save a dish, and all the crispy bits will get swept into the broth.
Or use a skillet. If you’re using a stainless steel pot that’s more tall than wide, brown the chick’n in a skillet and prepare the soup separately.
Add the chick’n near the end. Add the browned chick’n back near the end instead of simmering it with the rice so it keeps its texture.
Reheating. The rice continues absorbing broth as the soup sits and it thickens up a lot. Add a splash of broth when reheating if it gets thicker than you like.
Vegan Chicken and Rice Soup FAQ
Can I use another kind of rice? Yup, but the cooking time may change. White jasmine rice cooks quickly and gives the broth a soft, silky consistency. Brown rice will need to cook longer. Wild rice is really nice, too! Just needs to cook longer.
What kind of vegan chicken should I use? I use homemade chick’n seitan, but any store-bought vegan chicken will work. Thinly sliced tofu or yuba are also great here. Whatever you use, brown it first for the best flavor and texture.
Can I make it ahead? For sure. The flavor gets even better after it sits, although the rice will keep soaking up the broth. Add more broth when reheating as needed.
Can I freeze it? Yes. The rice will soften a little after freezing and reheating, but the soup will still be delicious. Add a splash of broth if needed.

Big Hugs Chick’n & Rice Soup
Notes
Ingredients
- 1 tablespoon olive oil
- 2 cups chick’n seitan pulled into 1 to 2 inch pieces (8 ounces)
- 2 tablespoons vegan butter (I used Miyokos)
- 1 medium yellow onion thinly sliced
- 2 cups carrots cut into 1/2 inch chunks
- 2 ribs celery thinly sliced
- 3 cloves garlic minced
- 1 teaspoon poultry seasoning
- 1 teaspoon salt
- Freshly ground black pepper
- 1/2 cup white jasmine rice rinsed
- 8 cups vegetable broth
- 1/4 cup chopped fresh dill plus extra for garnish
Instructions
- Preheat a 4-quart pot over medium heat. Sauté the chick’n in the olive oil with a pinch of salt until nicely browned. Remove from the pot and set aside.
- Sauté the onion in the vegan butter with a pinch of salt for about 5 minutes, until translucent. Add the carrots and celery and cook for about 5 minutes. Add the garlic and sauté until fragrant, about 1 minute, using a little extra butter if you like. Add the poultry seasoning, salt and pepper and sauté for 1 minute more.
- Add the rice and broth. Cover and bring to a boil. Once boiling, lower the heat to a simmer and cook for about 15 minutes, until the rice is cooked and the carrots are tender.
- Stir in the chick’n and dill and taste for salt and pepper. This definitely tastes better the longer you let it sit, but it can be enjoyed right away, too. Garnish with extra dill and serve!

Absolutely fabulous. My son has celiac so I made it with rehydrated soy curls instead of seitan, big hit at my house. Thank you!
This recipe has been a favourite for years. It is literally a hug in the belly and is great for a comforting meal or when you’re sick. Thank you for this amazing recipe!
I have been using this recipe every autumn and winter since you posted it, but with a twist! I add small short pasta, like macaroni or spiralli (sometimes even orzo) instead of rice and cook it down until it’s drier than in your pictures. It’s hearty, creamy and comforting.
Today is the first time the recipe is coming out for it’s A/W 2025 season and even though I’m lamenting the loss of the summer, making this soup brings it’s own little bit of sunshine!
Completely yummy and so comforting. Thanks for the wonderful recipe! I used dried dill which was fine but imagine fresh would take it to the next level.
Made this today and yes it really is easy af and very good
This recipe is amazing and the whole family loves it! I’ve now made it twice and increased the amount of rice the second time (about 3/4 cup), just to experiment, and since it would have left me with a ridiculous amount of rice had I not just used what I had left. My kiddos liked it with more white jasmine rice, and my partner suggested that I try brown rice next for a bit more texture. I did use packaged “chick’n”, which helped it to come together quickly on a weeknight, but I look forward to trying the homemade version soon. The fresh dill is such a nice touch as well! Thank you for yet another fantastic recipe, Isa!
Soup season is back and this was the first thing to enter my mind as I tried to combat these chilly fall evenings . . . especially as my heart is feeling heavy, and I’m trying to be hopeful and thinking about unity, instead of division!
When I said that I was making this, my thirteen year-old daughter said, “Yay! That’s my favorite!” I forgot to get celery, so I added a little celery seed, and upped the carrots for bulk & texture. I also did not have fresh dill, so I added dried. It’s not exactly the same, but still so good. I also added a full cup of brown rice, so it took a little longer to cook. I have almost always made slight variations each time I’ve made this and really can’t seem to go wrong. Isa is a genius and the recipe, as is, is probably the best. Yet, it is just so delicious and and easy to make in what ever way works for you on a quick weeknight or a leisurely weekend that I simply felt I had to sing this soup’s praises once again! Writing this, in solidarity . . .
A really good soup! I couldn’t find dill so I subbed with parsley and was still very pleased.
I make this soup all the time. Sometimes I get a little wild and add noodles instead
Thanks for a great recipe
I finally made this after having had the tab open for what feels like forever. OH WOW. It’s so, so good. I LOVE fresh dill, and all the flavors came together so beautifully. I’m so glad I took the time to make the chicken seitan to go in. This was so easy, so satisfying, and SO GOOD. I’m in love. This is a new regular for me now 🙂
I’ve been following Isa for years now…I think since 2005 maybe? I had wondered what had happened to PPK since it kinda feel off the radar for a few years it feels? So glad to see these great recipes and I absolutely love everything she makes.
🙂
Made this for Hanukkah and it was delicious. Hearty and so satisfying. I used frozen unchicken strips that were soy based rather than seitan. Didn’t have poultry seasoning so I used Sheffield’s British Pub Chicken seasoning. Thank you so much for a lovely recipe! Vegans and nonvegans all loved it.
Just made this tonight – super comforting and tasty My mom always made chicken soup with rice, so I’m right there with you! Your seitan chicken recipe looks AMAZING!! I can’t wait to try it. I didn’t have time for it today, so I used a diced russet potato instead. Super flavorful but simple. The only thing I would do differently next time is use slightly more rice, maybe 3/4 cup. Or get some crackers or bread to sop up the broth
I want to say thank you for this and your many other amazing recipes! I started cooking some recipes from your website last year, and they always come out flawlessly. Recently I borrowed Isa Does It from my local library and have been happily cooking my way through it. I saw this recipe yesterday during the work day and looked forward to cooking it all day. It came out absolutely perfectly. Thank you for all that you do to make the world a little bit tastier and friendlier for animals and the planet <3
WOW! So simple after making the “Chicken” seitan the day prior. And soooo good. i used the leftover broth from making the seitan in this soup. Thanks Isa!
Hey Isa, Happy birthday. I’m a day late. It makes me happy knowing that if I’m spending another year floating around the sun you’re here on the planet doing it with me. I use your recipes nearly daily and thoroughly enjoy the results. The joy and lightness I feel emanating from your words brings me joy and light. Loving the way you make an effort to connect and share with us even when I imagine life is very busy for you. As well as your concern for the creatures we share living space with. Your latest seitan recipes have me eager to get my mouth around your meaty bits. Thanks for being an awesome chick and, please continue to rock on.
What kind of “broth”??
Veggie broth. This is a vegan recipe site.
Hi Isa,
Thanks for sharing this recipe! I definitely want to make it. I’m writing from Singapore and I’m not familiar with poultry seasoning. Is it a herb and spice blend? Thanks!
Yes thyme, sage, rosemary.
